TUTTI - FRUTTI - PANCAKES

Ingredients
  • Vegetable Oil
  • 4 Cups Fruits (Strawberry, Banana, Papaya, Grapes, apple ext:) - Chopped
  • Yogurt
  • Marple Syrup
  • Icing Sugar

For Sweet Pan cake batter
  • 1/3 Cup Flour
  • 1/2 tsp Baking Powder
  • 1 tbsp Sugar
  • Salt to taste
  • 3 Eggs
  • 1/2 Cup Water
  • 1/2 Cup Milk
  • 3 tbsps Melted Butter

Method
                     In a Bowl Add to Flour, Baking Powder, Salt and Sugar and Mix them all. After whisk it Eggs and Water. Beat well. And then Gently add Milk and Butter. Beat again till Fluffy Batter. Now place to the Refrigerator. Take off the refrigerator. Now Make Pan cakes.
                     Now Take a Plate. Keep it two Pan cakes. And Middle of the Pan Cake Put fruits, Yogurt, Sprinkle Marple Syrup, Dust Icing Sugar and Now you have to tasty tutti frutti pancakes.

FALAFELS

FALAFELS

Ingredients
  • Boiled Chick Peas 4 cups
  • Boiled & peeled 2 medium Potatoes
  • 1 Onion
  • 3-4 Cloves of Garlic
  • 3-4 Green Chillies
  • 1-2 teaspoons of Grated Garlic
  • 2 Tablespoons of Plain Flour
  • 1 teaspoon of Salt
  • 1 teaspoon pepper
  • Cook for Oil

Method
                   Firstly, add chick peas, Potatoes, Onion, Garlic, Green Chillies into a food processor. And then add the Spices them. Salt and Pepper. Blend the Mixture. Remove the Mixture and add the plain flour as that help to bind the Mixture. Divide the Mixture 20-25 small balls. You can keep them round shape or flatten slightly.
                     Heat the Oil and fry the falafels in a Medium heat, turning them Occasionally to ensure that they are cooked thoroughly.
                        Serve with Slices of  Bread.

CHOCOLATE STRAWBERRY SMOOTHIE

Ingredients
  • 7 large Strawberries
  • 2 Bananas
  • 1 cup Milk
  • 1 1/2 cups Chocolate Syrup
  • 1 cup Vanilla Yogurt

Method
Blend these all Ingredients in a Blender.

MANGO SMOOTHIE

MANGO SMOOTHIE

Ingredients
  • 2 cups Chilled milk
  • 1 Ripe Big Mango - Chopped
  • 1/3 cup Chilled Orange concentrated
  • Grated Ginger 1/2 tsp
  • Ice Cubes 1 cup

 Method
                    Mix the All these Ingredients into Blender. Blend with a lot Ice Cubes until smoothie.

  • All purpose of Flour 250g
  • Sugar 250g
  • Butter or Margarine 1tbsp
  • Milk Powder 50g
  • Baking Powder 3tsps

Method
                   In a Bowl  place to Flour, Sugar 125g, Milk Powder, Baking Powder and Mix them All. after that make Balls. Flat balls and sprinkle with water and spread with Sugar. Now, Place to oven and bake it with 20- 25 Minutes. About 50c.

BREAD PIZZA

Ingredients
             Bread slices        8
             Butter   1 tablespoon
             Onions,sliced     2
             Green capsicums,sliced                 2
             Tomatoes,sliced               2
             Mushrooms,sliced           8
             Salt         to taste
             Sugar     a pinch
             Pizza sauce         1/2 cup
             Cheese,grated 1/2 cup

Method
Heat butter in a pan, add onions and sauté till translucent. Add capsicums, tomatoes, mushrooms, salt and sugar and sauté for three to four minutes. Spread the pizza sauce on each bread slice and place the vegetable mixture over it. Top up with grated cheese and place the slices on a hot nonstick pan and cook till the cheese melts. Cut into diagonals and serve hot with tomato ketchup.

  • Big Onion 250g
  • Green Chilies 150g
  • Red Onion 250g
  • Banana Pepper 250g
  • juggery 150g
  • Dates (Chopped) 200g

  • 1/2 tsp cardamom Powder
  • Vinegar
  • 2tbsps Chili Powder
  • 1/4 tsp Turmeric  Powder
  • salt to taste

Method
                 Cut pieces to Big Onion, Banana Pepper, Red Onion and Green Chillies. Now add it Dates, Juggery, Chili Powder, Turmeric Powder, Ginger, Garlic, Salt,  Cardamom and Vinegar. Mix them all. You can use it One Day After.

Ingredients
  • Tomato 500g
  • Sugar 50g
  • 1Big Onion - Chopped
  • 1 tsp Ginger - Chopped
  • 1/8 tsp Cloves - Chopped
  • 2 tbsps Chili Powder
  • 1/4 tsp Turmeric  Powder
  • Salt to Taste
  • Vinegar

Method
                Leave to Tomatoes in a Hot water Bowl and peel to shale. And then Blend with Chopped Onion and ingredients. After Blend extract to Clay Bowl. Now Cook it with 2- 3 minutes. After Cooked Leave for Cool. and then you can Use Tomato sauce.

FRIED SAUSAGE AND ONION

Ingredients
  • Butter 100g
  • Sliced Onions 2 medium
  • Sausages 5 - 6
  • Bell peppers 1cup
  • Green Chili 2 - 3
  • Honey (If you Need)
  • Tomato Sweet Chili Sauce 3tbsps
  • Salt to taste
  • Pepper to taste

Method
                   Slice or cut the sausages into chunks. Cut the bell peppers into strips.Heat the butter, add the sliced onions and saute for 2 minutes.Add the green chillies, bell peppers, ginger and saute for a minute.
                       Mix in the sausages and cook for 5 - 7 minutes. Add the sweet chilli sauce and season with salt and pepper.Enjoy with bread.

ULUNDU VADAI


ULUNDU VADAI

Ingredients
  • Ulundu 250g
  • 30g Red onion – Chopped
  • 1tsp Curry Leaves – Chopped
  • 1tsp Green Chili – Chopped
  • ½ tsp Salt
  • ¼ tsp cumin
  • Oil – For fry

Method
                Combine with water Ulundu and leave for 12 hours. Then Extract water, Grind it. Be carefully don’t use water. In a Bowl mix ulundu with Red Onion, Curry Leaves, Green chili, salt and cumin. Mix them all with your finger tips. And Leave for 15 minutes. Now you can Make rounds and with your finger make a hole. Then Fry with oil.

CHICKEN BIRIYANI

CHICKEN BIRIYANI

Ingredients
500g Long Grained Rice - Boiled
1 1/2 tsp Chilli powder and Curry powder
 2Tsp Ginger and Garlic - Chopped
1Tsp Turmeric Powder
400g Tomato and Big Onion Chopped
200g Potato - Small diced
1Tsp Cumin Seeds
150ml Curd
40g Coriander Leaves and  Mint Leaves
100gm Butter
4Tsp Cardamom and Cloves
100g Fried Cashew Nuts and Sultana
700ml Water
4 Fried Eggs
100ml Vegetable Oil
1Tsp Rose and Red Coloring
Cinnamon,   Tempering leaf, Curry Leaves
10g Salt powder
400g  Boneless Chicken - Diced

Method
                Heat Oil in a pan saute the Curry powder, Chilli Powder, Salt, and Mix the Chicken and fry it  in a medium heat. Then Mix Ginger, Garlic, Tomato and Big Onion. Now add Rice, Potato  and other ingredients Mix them all.

YANG CHOW FRIED RICE


YANG CHOW FRIED RICE

Ingredients
  • Shade less prawns   100g
  • 50g Chicken - Diced
  • 500g Long grained Rice - Boiled
  • Eggs 3
  • 10g Green peas - Boiled
  • 10g Button Mushrooms - Chopped
  • ½ tsp Tea Essence
  • 2 tsp
  • White pepper powder
  • Salt to taste
  • 1tspCorn flour
  • ¼ tsp Sesame Oil
  • 10g Spring onions with greens, chopped
  • Corn Oil

Method
            Prawns into a bowl mix it with salt, pepper, corn flour, egg wash and leave for minutes. Then Heat corn oil in a pan sauté the prawns until golden brown. Now add to green peas, button mushrooms and egg and mix all. And mix in the cooked rice, essence, sesame oil, copped Spring Onions. Mix them all to medium heat in 3 minutes.

CHOCOLATE FONDANT


CHOCOLATE    FONDANT

Ingredients

  • 125gm of Chocolate
  • 100gm of Sugar
  • 125gm of Butter
  • 3 Eggs
  • 30gm of Flour
  • Cold Cream

Method

Melt the Chocolate and Butter in a double boiler. Crack the Eggs into a bowl . Add sugar and whisk till Fluffy. Gently fold in the flour and whisk together. Let the Chocolate mixture cool down and fold it into the batter. Butter and flour the ramekins and pour the mixture into them. Put the ramekins in the Oven at 200 degrees for 10 – 12 minutes until the top is firm and cracking.
Serve Chocolate Fondant with Cold Cream.

VEGETABLE BURGERS

VEGETABLE BURGERS

Ingredients

  • 120 gm French beans - strung and blanched
  •     120 gm cabbage - grated
  •     120 gm cauliflower - grated
  •     1/2 cup carrots - grated
  •     1 cup potatoes - boiled and mashed
  •     2 tsp coriander powder
  •     salt - to taste
  •     1/4 tsp turmeric powder
  •     1/2 cup boiled peas
  •     2 eggs - slightly beaten
  •     1/4 cup flour
  •     bread crumbs
  •     oil

         
Method

Heat oil in a pan and add all the chopped vegetables to it. Stir over high heat.

Add coriander powder, salt, turmeric powder and mix well.

Turn off the heat. Keep aside to cool.

When cool mix in the boiled potatoes and peas.

Make thin rounds so as to match the bun.Dust with flour and dip into the beaten egg.

Coat with bread crumbs.

Heat oil and deep fry till they turn golden brown in colour.

Slit the burger roll and place the patty in it along with mustard and mayonnaise. Serve.

NASIGURAN RICE

NASIGURAN RICE

Ingredients

  •     1/2 kg long grained rice - boiled
  •     4-5 tbsp cooking oil
  •     150 gm boneless chicken - diced
  •     100 gm shadeless prawns
  •     2 small onions - finely chopped
  •     4 cloves of garlic - finely chopped
  •     4 red chillies - ground
  •     4-5 tbsp sweet soya sauce
  •     salt - to taste
  •     pepper - to taste
  •     fried eggs - for garnishing

         
Method
Boil rice and keep aside.Heat oil in a pan and saute the onion and garlic until golden brown.Add chicken and cook.Sprinkle in salt and pepper.When the chicken is almost done add the red chillies and then toss in the prawns.Stir fry for a few minutes.Add the sweet soya sauce and mix in the cooked rice.In another pan, make a double fried egg.Serve rice hot with a fried egg on top.

Ingredients

Instant coffee powder

Method

Heat butter in a deep non-stick pan. Add sugar and mix well. Add condensed milk and mix well. Add instant coffee powder and mix well. Cook, stirring continuously, till sugar melts and the mixture thickens. Spray a bowl with butter spray. Remove pan from heat, add chocolate chips and marshmallows and mix, stirring vigorously, till the marshmallows melt and blend completely. The mixture will now start leaving sides of the pan. Transfer into the prepared bowl. Sprinkle almonds on top and cool for 3-4 hours before serving.

Ingredients
  • Flour  152g
  • Baking Powder  7g
  • Butter  19g
  • Sugar   19g
  • Eggs  23g
  • Milk (approximately)  28g
  • Pinch of Nutmeg  
  • Raisins  60g
  • Orange Zest  


Method
  1.   Roll out the dough to about 1cm thick and cut out with 6cm round cutter.
  2. Place on a greased baking tray.
  3. Egg wash after resting for 10minutes.
  4. Bake at 220c for 20 - 30 minutes.

BRIOCHE DOUGH (SWEET)

  • Flour 125g
  • Yeast  40g
  • Milk  500ml
  • Sugar   200g
  • Salt  20g
  • Egg Yolk  7 nos
  • Soft Butter  400g
  • Raisins300g


Method

  1. 1. Mix all the ingredients together (a loose dough)
  2.  Leave to ferment for 45 minutes.
  3. Preheat oven at 180c to 200c temperature.
  4. Divided in to 40g portions.
  5. Egg wash before baking.

HOT CHOCOLATE PUDDING


HOT CHOCOLATE PUDDING

 Ingredients 

  • 2 cup sifted all-purpose flour
  • 40 g sugar
  • 4 tablespoons unsweetened cocoa powder
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 4 tablespoons melted butter
  • 1 cup chopped pecans or walnuts
  • 2 cup brown sugar
  • 1/4 cup unsweetened cocoa
  • 21/2 cup very hot water

Method

Preheat oven to 350°.
Sift into a bowl, flour, sugar, 2 tablespoons cocoa, baking powder, and salt. Stir in the milk and melted butter and mix until smooth. Add chopped pecans or walnuts. Pour batter into a generously greased and floured 9-inch square baking pan. Combine the brown sugar with the 4 tablespoons cocoa and sprinkle over the batter. Pour the hot water over all. Bake for 40 to 45 minutes. Cut warm cake into squares and serve inverted on dessert plates. Spoon sauce from pan over each serving.
Makes about 9 servings

BAKED CHEESE CAKE


BAKED CHEESE CAKE


For Tart Pastry

  • Icing Sugar 100g
  • Butter 200g
  • Refined Flour 300g
  • Peeled Lemon Zest 1 ½ tsp
  • Egg 1

Method
Icing sugar, Butter, Lemon zest, Flour Mixed well without any Pressure.  Gently mixed it with your fingertip. Gradually add the  beaten egg beaten just until incorporated. Flatten the Pastry into a disk, cover with Lunch sheet , and refrigerator for 12 hours. Lightly butter and flour, or spray with a non stick flour cooking spray , an 8 – 9 inch (20-23 cm) tart pan with a removable bottom. Evenly pat the chilled pastry onto the bottom and up the sides of the pan. Cover with lunch sheet and place in the freezer for about 15 minutes.
Meanwhile  preheat oven to 170 co – 180co. and place the tart pan on a larger baking pan and bake crust for  5 minutes.

For Pastry Cream

  • Cream Cheese 500g
  • Sugar 150g
  • Eggs  4
  • Fresh Cream 125ml
  • Lemon Zest 2 tsps

Method
In a bowl, mix the cream cheese and sugar together. Meanwhile you have to one by one add to the egg and beat well. After that add the Lemon zest and fresh cream and beat again. And then pour into the tart pastry and bake  150co -160co for 45 minutes.
Decorate with Cream and Strawberry and serve with chill.

CHOCOLATE PUDDING CAKE


CHOCOLATE PUDDING CAKE
Ingredients

Cooking chocolate
300 grams


Butter
4 tablespoons


Sugar
1/2 cup


Refined flour
3/4 cup


Salt
a pinch


Baking powder
2 teaspoons


Milk
6 tablespoons


Vanilla essence
1/4 teaspoon


FOR TOPPING



Sugar
1/3 cup


Brown sugar
1/2 cup


Coffee decoction
1/2 cup


Unsweetened cocoa powder
2 tablespoons



Method

Preheat an oven to 175°C /350°F. Melt butter and chocolate in a bowl kept over a deep non stick pan of boiling water. For topping mix sugar, brown sugar, coffee decoction and cocoa powder well and set aside. Once the butter and chocolate melt, add sugar and mix well. Remove the bowl from over the pan. Sift refined flour, salt and baking powder directly into the bowl and mix well. Add milk to adjust consistency. Add vanilla essence and mix well. Pour the batter into the ovenproof glass dish. Pour the topping mixture over. Keep the dish in the preheated oven and bake for 40 minutes. Serve with ice cream or by itself.
