ALOO CORN CUPS


 ALOO CORN CUPS 

Ingredients

Potatoes,boiled
5 medium


Corn kernels,coarsely ground
1 cup


Oil
1tablespoon + for deep-frying


Cumin seeds
1 teaspoon


Green chillies,finely chopped
1 teaspoon


Turmeric powder
1/4 teaspoon


Black peppercorns,crushed
1 teaspoon


Salt
to taste


Fresh cream
2 tablespoons


Chaat masala
1 teaspoon


Boondi
2 teaspoons


Fresh pomegranate pearls
2 teaspoons


Green chutney
2 teaspoons


Parsley

Method

Halve the potatoes without peeling and scoop them properly to make a cup.

Heat 1 tbsp oil in a non stick kadai, add cumin seeds and green chillies and sauté for ½ minute.

Add corn and scooped out portions of the potatoes and mix well. Add turmeric powder, crushed black peppercorns and mix well. Add salt and mix.

Cook till the potatoes are cooked.Add fresh cream and mix.Transfer this mixture into a bowl.

Heat sufficient oil in a kadai and deep fry the scooped out potato cups till golden. Drain on absorbent paper.

Sprinkle chaat masala on the potatoes while they are hot and toss lightly and arrange them on a serving plate.

Fill them with the corn mixture. Garnish with khari boondi, fresh pomegranate pearls green chutney and parsley leaves and serve.
